Originally from Bologna, Italy, Il Ristorante's Chef de Cuisine Diego Martinelli brings to the table 10 years of rich culinary experience, from years of service in various five-star restaurants in Egypt, Qatar, Milan and Modena in Italy, Ireland and the UK; and expresses, "I am proud to be able to join the winning culinary team at the Bulgari Resort Bali and at Il Ristorante."
Using only the finest Italian ingredients married with the archipelago's organic produce, Chef Martinelli contemporizes classical Italian cooking.
He also presents his authentic Italian cuisine to a wide International audience at the resort, and speaks besides his mother tongue, French and Spanish also. With this and over a decade of culinary proficiency up his sleeve, one would easily regard him as an international Italian chef. Since taking the helm at Il Ristorante's kitchen, he proudly introduces his new dishes.
"Among my recent recommendations is Pan Seared Scallop with Field Mushrooms, Wagyu Beef Carpaccio Brushed with Tamarind Oil as well as Hand Made Tagliatelle with Poached Live Atlantic Lobster. I also would like to present at Il Ristorante my new selections which include Carpaccio di Manzo Wagyu, Salsa al Basilico e Acciughe, Insalata Mista e Parmigiano (Wagyu Beef Carpaccio, Basil & Anchovies Dressing, Parmesan Cheese and Mix Salad), Tagliolini Caserecci all'Uovo, Salsa al Burro e Timo Fresco, Tartufo Nero Estivo di Norcia (Handmade Egg Tagliolini, Butter and Fresh Thyme Sauce, Norcia Black Summer Truffle) and Medaglione di Salmone in Pancetta con Purea di Patate al Cipollotto e Caponata di Verdure (Pancetta Wrapped Salmon Medallion with Spring Onion Potato Purée and Garden Vegetable Caponata)."

When asked whether Italian cuisine blends well with locally grown organic ingredients, Chef Martinelli claims, "I always put my best effort to use ingredients which are indigenous to Italian cuisine. But I also present special creations in the menu which are results of improvisation by combining authentic Italian ingredients with selected fresh local products - most of which are personally hand-picked - that enhances the flavor and adds creativity to the dish... as well as heightening its level of presentation. I believe in simplicity, and that presentation indeed plays a significant part".
A wine list of predominantly Italian selections from world-renowned vintners such as Gaja, Sassicaia, and Antinori harmonizes with the cuisine. These combinations blend into an exquisite dining experience, and from Chef Martinelli's sense of simplicity, arises the most sophisticated luxury dining on the island.
